I would really like to remove some of the large apps that keep running in the background (Finance and such).  How can I remove them?

As of now...no. The only option would be to wait until the phone can be rooted and then you can have a clean install of the apps you choose. :-/

Use can remove or disable them with adb shell: http://www.addictivetips.com/mobile/how-to-disable-uninstall-apps-on-htc-t-mobile-g2-adb-method/

Only thing is, if you reboot you will have to go through the whole process again.

No.

pm disable com.android.photobucket. will permanently disable the app.....   cuz the system doesn't see it missing so won't restore it on reboot.  It stays disabled.  But I know its there and that annoys me.
